Today I would like to show you a dish with Prawns with a most exciting sauce. It is called LAUGHING PRAWNS because of the way the prawns look after it is cooked. You will be amazed at this dish once you have tried it. Watch the video and you will find it is easy to cook it.!!
Here are the ingredients you need:
10-12 Large Prawns (at least Medium size)
Shell removed and deveined, then marinated for 20 minutes with
1 tsp salt
1 tsp pepper
1 tsp cornstarch
then rinsed, wiped dry, set aside while you prepare the batter.
For the batter mix
1 tsp baking powder
3 tbsp wheat flour
1 tbsp cornstarch
1 tbsp glutinous rice flour
half a tbsp custard powder
1 tsp salt
4 tbsp water or a little more
mix all together to form a batter.
Then add the prawns , coat it well.
Heat a pan with oil , once oil is warm enough, drop the each prawns into the oil, fry for about 1 minute, remove the pan from the heat.
Place the hot oil and prawns aside but let the hot oil continue cooking the prawns for another minute.
Remove prawns from oil and place it on kitchen paper towel to drain excess oil.
Now heat a fresh frying pan. Add
2 tbsp cooking oil once its warm enough add
1 tsp chopped garlic
1 tsp chopped ginger
1 stalk of finely cut scallions
2 chopped red chillies (less chili if you do not eat spicy food)
Fry till fragrant and then add
1 tbsp fresh chili paste (or less if you do not eat spicy food)
1 tbsp tomato ketchup
1 tsp Sugar
1 tbsp mashed tau chiew ( preserved salty soya beans- brown colour)
Stir into the sauce, keep frying. Now add
75-100ml either Vegetable stock or plain water
1/2 tsp cornstarch with 1 tbsp water thickening
Keep stirring to avoid sauce from becoming a lump.
Taste the sauce, it should be spicy sweet sour and a touch of saltiness .
I added a little lemon juice to adjust the sauce taste to more sweetness and sour to my liking.
Add the fried prawns and toss with the sauce.
Finally add 1 tbsp Shiao Xin Wine and dribble a little Sesame Oil
Mix well. Remove and serve with Lettuce leaves as Wrap or with plain steamed rice. YUMMY!!!
PS.: You can see after deep frying the Prawns, the opening where you remove the veins, open up like Lips that are Smiling/Laughing
hence this dish is called LAUGHING PRAWNS and the multi taste
of spiciness from the chili, sweetness from sugar, saltiness from the preserved soya beans, sour from the tomato ketchup/lemon juice.
